Wine Closures, cork versus screw cap - South Florida Food and Wine

Emilio Guerra is the?Regional Manager for Dreyfus Ashby & Co., purveyors of fine wines. I have known and worked with Emilio for four years; we first met when he was one of the instructors in the Sommelier certification program I was enrolled in. Recently Emilio was a guest speaker in my Food & Wine Pairing class at Florida International University, he took the students on a tour of ros?s from around the world, and it was highly amusing to say the least.

I like Emilio?s style and his storytelling ability so I asked him to be a guest contributor to South Florida Food and Wine, he agreed and now twice a month, readers will ?be ?Discovering Wine with Emilio Guerra??

Today we begin our first guest post with Emilio as he talks about the heated wine topic of cork vs. screw cap.

At a recent wine tasting, as I was pouring one of my wines a person commented with disdain, ?Oh! that wine now comes with a screw cap?!? I responded with a smile, ?Screw caps are Good! They are our Friend!? and here are some of the reasons why.

Let me start out by saying that 98% of wine made today is meant to be drunk within the first three years of the vintage. Except for the great growths of Bordeaux, the Grand Crus of Burgundy, the Barolos of Piedmont and some exceptional wines from California, Spain and Italy, most wines will give you their best quality and flavor within the first three years of their life ? Period.

In addition, the cork has been the closure of choice for centuries because it was easy to obtain and work with and it also lends a sense of aristocracy and importance to the wine. However, natural corks only come from one place, the bark of cork oak trees. This type of oak produces a thick bark harvested every 10-12 years and 50% of the world?s cork oak trees are found in Portugal. Now consider Global Warming and the increased demand for this product and you can see why there is not enough cork to go around.

Finally, natural cork is not a perfect closure and sometimes when the cork is defective or shrinks in the bottle it allows air to get inside and taints/spoils the wine. This is known as ?cork taint? and unfortunately it is more common than people think, occurring 6-8% of the time. For a producer that does not make an expensive sought after product, loosing 6-8% of his wine is not acceptable. This is the main reason why the screw cap was born.

Yalumba Winery in Australia was one of the first places where screw caps went into commercial in 1976. Later is was adopted by most of the producers in New Zealand which really brought the stelvin cap, as it is now known, to the world?s attention. Since then, producers around the world have adopted this type of closure which helps the wine, the bottom line and the environment.

So next time you see a wine with a stelvin cap remember the reasons why it?s there and rest assured that the wine inside will be fresh and perfect to drink.

Huntley insurance salesman wanted for fraud ? Huntley news ...

Authorities are searching for an insurance salesman from far northwest suburban Huntley accused of collecting money for cancelled policies.

A total of 29 charges have been filed against Russell Palermo, 46, of the 11300 block of Douglas Avenue. The charges stem from a six-month long investigation into allegations the local insurance broker allegedly committed fraud.

Detectives searched the agency last October and seized several documents along with computers after complaints from customers. Arrest warrants were issued for Palermo on Feb. 15. Officers unsuccessfully attempted to serve the arrest warrants, and Palermo remains at large.

The agency has since closed, and investigators believe that he has fled the area, according to Deputy Chief Todd Fulton. He is not considered dangerous.

Residents reportedly approached investigators in September claiming Palermo had been charging them insurance premiums with no policy in place, according to the Huntley Police Department. Palermo is the owner and operator of Huntley-based Palermo Insurance Agency, which provides both business and personal insurance policies through several different providers.

Two customers reportedly came forward after they noticed suspicious activity on their accounts with Palermo Insurance Agency, authorities said. Another resident became suspicious after Palermo allegedly took money as a down payment for an insurance policy the company had no record of being made.

A local real estate owner who reportedly purchased business insurance from the agency in 2006 also discovered Palermo?s insurance license was revoked in 2009, which would have prevented him from legally selling or obtaining policies for customers. The premiums for which the customer had been paying had allegedly been canceled in 2007 for non-payment.

Charges include 10 felony counts of financial responsibility, nine misdemeanor counts issuance of insurance with a license, four misdemeanor counts of financial responsibility, three felony counts of theft, a felony count of deceptive practice and a misdemeanor count of unlawful use of weapons.

The weapons charge stems from a knife seized during the search of the business, Fulton said.

The investigation is ongoing.

Google+ may have 90 million registered users, but they?re not spending much time at the site.

We?ve been seeing and reporting statistics about this since last summer.

Anecdotally, it seems that Google+ is used a lot by Googlers, plus a few celebrities and bloggers, but not by normal people.

Now, ComScore seems to confirm it. According to ComScore?s research, as reported by the Wall Street Journal, users with personal computers spent an average of 3 minutes per month on Google+ over the last six months.

HP CEO Meg Whitman has big plans for the future, that include a Windows 8 tablet this year. The info comes from The Wall Street Journal, quoting the HP official who says that it?s time to rebuild after a year of disappointment. After the Palm takeover it all went downhill for HP, who almost shut down the entire mobile division at some point.

The company was ready to give up tablets and smartphones alltogether, after having to get rid of the HP TouchPad stock, by selling the tablet for $100 a piece. Now the slate has become a hobby for Android porters, who try to bring Android 4.0 via custom software such as CyanogenMod 9. Now, HP wants to get into cloud computing, security and tools for the business segment. This sounds very much like Microsoft material, so it?s wise to go with Windows 8 this time, not Android or webOS.

The HP TouchPad ran webOS and it was canceled two months after it was launched. Leaks uncovered that there was also a 7 inch unit in the making, but that one also got canned. I wonder what format HP will adopt for the Win 8 slates this time. They have to be careful not to ship a behemoth of a tablet with poor battery life, but a flimsy little tablet is also something they wouldn?t want to deliver. I?d go with an 8.9 inch unit with a 10mm or so waistline, an Intel CPU of the new generation and maybe a decent camera thrown in there.

Firewall break leads China web surfers to Obama's Google+ page

A break in software known as the Great Firewall, has allowed people in China access to the forbidden Google+, the BBC reported.

They've been using their new found freedom to leave a few hundred or so messages for President Obama on his Google+ page.

"The expressions contributors used were in the style of mainland China and in simplified Chinese," the BBC said. It noted that some people made jokes, while others were more serious, asking for liberty in the case of civil rights activist Chen Guangcheng, who is under house arrest.

"Many people don't understand the meaning why all Chinese are coming here. We envy American people their democracy and freedom," Agence France-Presse quoted one poster as saying.?

Google+ is among the social media sites that are typically blocked in China. Still, somehow Google+ appeared to become available through some users' mobile devices, AFP said.

Tennessee fights canceled after liquor license denied

For good or bad, alcohol is a part of every MMA event. Whether it's fans getting liquored up in the stands or people flocking to bars to see pay-per-views, alcohol is part of the fight world. Fight organizers in Tennessee didn't want to find out what MMA would be without it.

Extreme Fight Night had to return $6,200 in sponsorship dollars after his permit was denied in Gallatin, Tenn. The city claims they didn't approve the permit because it was designated for non-profit organizations only.

"They (the attendees) will bring beer in their cars, they will be drinking in the parking lot ? we will have no control," said the company's marketing director, Christine Swartz, at the beer board hearing. "Whereas, if we sell beer within the venue, we have security; we can control that. If someone has more than one, or we think they're on the brink of a situation, we can physically have them removed."

The story ended well. Extreme Fight Night found another venue to run their fights that had beer. Fight fans had their cold beer in hand again. Phew.

If almost real is good enough, a trip to Washington D.C. to visit the world's largest museum may no longer be necessary. The Smithsonian is set to launch a program that will harness 3-D technology to make replicas of artifacts in its collection available to museums around the world, according to a report.

The initiative, which will be promoted starting next week, aims "to create a series of 3-D printed models, exhibits, and scientific replicas ? as well as to generate a new digital archive of 3-D models of many of the physical objects in its collection," Daniel Terdiman reported Friday on CNET.

A call and email to the Smithsonian to confirm the report are, at this time, unanswered, but the effort has been hinted at for several years. A behind-the-scenes blog post from the museum in September 2010, for example, details a digitization fair where tools to create 3-D replicas generated a lot of buzz.

A November 2011 blog post on the Smithsonian Magazine website explains how the Office of Exhibits Central, which produces exhibits for the museum, is putting its 3-D printer to work. ?One upcoming project mentioned then was the creation of full-size 3-D model of a Thomas Jefferson statue.

The completed replica statue now installed at the "Slavery at Jefferson's Monticello: Paradox of Liberty" exhibit at the National Museum of African American History is what the Smithsonian plans to tout as it kicks off the effort its new initiative, according to CNET.

The initiative centers on an effort to create a digital archive of the museum's collection made with a high-end laser scanner that can capture the geometry of objects down the micron level and other tools. The data can then be fed into a 3-D printer to create life-like replicas of artifacts.

Hurdles, CNET notes, include financial and personnel resources to scale up the effort. Currently, just two digitization coordinators are behind the initiative. That's not much considering the museum has 137 million objects in its various collections, only 2 percent of which are on display at any given time.

"If we could leverage the power of 3-D to bring a portion of that collection to the world," Metallo told CNET, "that would be incredibly powerful, and definitely worth the expense."

FDIC closes small banks in Georgia, Minnesota

WASHINGTON (AP) ? Regulators have closed banks in Minnesota and Georgia, increasing to 11 the number of U.S. bank failures this year.

That represents a slower pace than last year, when 92 banks were closed.

The Federal Deposit Insurance Corp. on Friday closed Home Savings of America, based in Little Falls, Minn., with $434.1 million in assets and $432.2 million in deposits.

The FDIC will mail out checks to depositors in the amount of their insured funds.

Regulators also closed Central Bank of Georgia, based in Ellaville, with $278.9 million in assets and $266.6 million in deposits. Ameris Bank, based in Moultrie, Ga., agreed to assume Central Bank's deposits and essentially all of its assets.

The two bank failures are expected to cost the deposit insurance fund $106.3 million.

Even sharks have social networks

Sharks have a reputation for being ruthless, solitary predators, but evidence is mounting that certain species enjoy complex social lives that include longstanding relationships and teamwork.

A new study, published in the latest Animal Behaviour, documents how one population of blacktip reef sharks is actually organized into four communities and two subcommunities. The research shows for the first time that adults of a reef-associated shark species form stable, long-term social bonds.

The image contrasts with usual reports on this species, which mistakenly sinks its sharp teeth into surfers and swimmers from time to time.

Lead author Johann Mourier told Discovery News that "other species, such as grey reef sharks and scalloped hammerheads form polarized groups where individuals have a specific place, and such species may also have complex social organization."

Mourier, a scientist at the Center for Island Research and Environmental Study (CNRS-EPHE), and colleagues Julie Vercelloni and Serge Planes conducted the study at Moorea Island in the Society archipelago, French Polynesia. A total of seven sites were surveyed on a regular basis along just over 6 miles of the north shore of Moorea. The surveys included nearly hour-long dives at a depth close to 50 feet, with the diver photographing nearby sharks.

Analysis of the gathered data determined that the sharks were not within non-random collections, but rather had organized themselves into meaningful social groups.

"The four main communities are mixed-sex communities that use a specific home range, however, within these communities individuals tend to associate more often with others of the same sex and length," Mourier said.

In a prior study, he determined that length is proportional to a shark?s age, with male blacktip reef sharks being mature at about the age of 7 and measuring around 3.6 feet long. Females are slightly larger than males.

Mourier suspects the sharks join together in communities for protection and to avoid aggression with each other. He and his colleagues also observed a remarkable feat, "when a group of about four or five blacktip reef sharks herded a school of fishes around a coral structure." This suggests they can cooperate with each other to hunt as a team.

Yet another perk to organizing could be that each shark becomes a comforting landmark for others in the group. As Mourier said, "Using a home range and knowing all individuals may help individuals to have a better knowledge of their environment."

The researchers point out that sharks? relative brain mass-body ratios have been found to be comparable to those of mammals, indicating that they are capable of complex social behaviors on par with those demonstrated in birds and mammals.

It could just be that the highly mobile nature of sharks, combined with the difficulty of following individuals in the open sea, has kept their social interactions hidden away from human eyes until recent years.

In another study, led by Demian Chapman, researchers showed that lemon sharks at the Bimini islands, Bahamas, tended to stay near their coastal birthplace for many years.

"We were very surprised to see that many lemon sharks lingered for years around the island where they were born ? often more than half of their development to adulthood," said Chapman, a shark scientist with the Institute for Ocean Conservation Science at Stony Brook University.

In both studies, age therefore seems to help shape a shark?s social life. Family ties may also be important to sharks, a possibility that Mourier and his colleagues are investigating now.

The scientists clipped the fins of 70 percent of the sharks involved in this latest study and are analyzing the bits for DNA.

He said, "This will soon reveal if they tend to group with relatives, as is the case in other social animals, such as for some mammals."

High court examines lying about military exploits

WASHINGTON (AP) ? Xavier Alvarez was in good company when he stood up at a public meeting and called himself a wounded war veteran who had received the top military award, the Medal of Honor.

Alvarez was lying about his medal, his wounds and his military service, but he wasn't the first man to invent war exploits.

He was, however, one of the first people prosecuted under a 2006 federal law aimed at curbing false claims of military valor.

Concerns that the law improperly limits speech and turns people into criminals for things they say, rather than do, are at the heart of the Supreme Court's review of his case and the Stolen Valor Act.

Veterans groups have come to the aid of the Obama administration, which calls the law a narrowly crafted effort to protect the system of military awards that was established during the Revolutionary war by Gen. George Washington. The high court will hear the case Wednesday, which is Washington's 280th birthday.

"They're committing fraud. They're impersonating somebody else. They take on attributes of somebody else, attributes of a hero who served honorably," said Pam Sterner, whose college term paper calling for the law wound up in the hands of members of Congress. "When you do that, impersonating someone else, that's fraud, not freedom of speech."

Civil liberties groups, writers, publishers and news media outlets, including The Associated Press, have told the justices they worry the law, and especially the administration's defense of it, could lead to more attempts by government to regulate speech.

When he established military decorations in 1782, seven years before he was elected as the nation's first president, Washington himself also prescribed severe military punishment for soldiers who purported to be medal winners but weren't. Since then, many men have embellished their war records, and some have won special recognition.

It long has been a federal crime to wear unearned medals, but mere claims of being decorated were beyond the reach of law enforcement.

The House of Representatives has more than once voted to name a post office after men who claimed awards they never received. The Air Force named an award after a man who falsely claimed to have survived the Bataan Death March and been awarded the Silver Star in World War II. The Boxing Writers of America named its perseverance award after the late Pat Putnam of Sports Illustrated because of his made-up tale of surviving a Chinese prisoner of war camp in the Korean War and receiving a Navy Cross.

The Stolen Valor Act aimed to solve that problem, and garnered significant support in Congress during a time of war.

"The admiration and respect for the military increased dramatically after 9/11 and the false claims, as well," said Thomas A. Cottone Jr., a retired FBI agent who investigated phony award cases.

Alvarez made his claims by way of introducing himself as an elected member of the Three Valleys Municipal Water District in Pomona, Calif. There is nothing to suggest that he received anything in exchange or that listeners especially believed him.

Even Alvarez' lawyers acknowledged their client sometimes has trouble telling the truth. "Xavier Alvarez lied," they declare in the first sentence of their Supreme Court brief and go on to recount six separate lies in the next few lines.

He lied when he claimed he played hockey for the Detroit Red Wings, married a Mexican starlet who made paparazzi swoon, was an engineer, rescued the American ambassador during the Iranian hostage crisis and was shot when he went back for the U.S. flag. Alvarez also lied, they said, when he talked about his military service.

But the lies Alvarez told harmed no one, they said, so what he did couldn't be considered fraud.

A three-judge panel of the 9th U.S. Circuit Court of Appeals in San Francisco struck down the law as an unconstitutional restraint on free speech and said the government might instead invest in an awards database that would make it harder for people to lay claim to medals they never won. Last month, the 10th U.S. Circuit Court of Appeals in Denver upheld the law in a separate case, saying the First Amendment does not always protect false statements.

The issue might never have reached this stage if not for the efforts of Sterner, and her husband, Doug.

He is a decorated Vietnam veteran who has made it his work in recent years to ensure that service members get the recognition they deserve and expose those who falsely claim acts of heroism under fire. Rather than wait for the government to act, Doug Sterner has entered nearly 100,000 award citations since Civil War in his online database, including all 3,475 Medal of Honor winners in U.S. history. His archive is used by the Military Times newspapers, published by Gannett Co.

Pam Sterner went back to school in her early 40s at Colorado State University in Pueblo, Colo. In a political science course, she wrote a paper that grew out of her husband's frustrations over phony award claimants whose worst punishment was public embarrassment. That paper eventually led to the Stolen Valor Act.

Doug Sterner's database did not save Rep. Jason Chaffetz, R-Utah, from some embarrassment when he invited cameras and reporters to watch him pin medals on an elderly Korean War veteran in June.

The veteran, Myron Brown of Utah, said his Distinguished Service Cross and Silver Star were awarded belatedly, and he asked Chaffetz to present them to him publicly.

After the ceremony took place, Sterner and others raised questions about the medals and the Pentagon confirmed to Chaffetz in December that they were not authentic.

"Others have been burned by this. I have too, but I want to solve the problem," Chaffetz told the Salt Lake Tribune. He is planning a hearing of the House Oversight and Government Reform subcommittee he leads to explore creating a government-run awards database.
